I know many of you were excited on Instagram when I posted the photo above of my dessert on Sunday night. Lucky for me, my parents came to town to visit on the weekend to celebrate Walker's birthday with us. My mom, being the incredible baker she is made an epically delicious flour-less chocolate cake. It was soooo perfectly chocolatey, incredibly moist and my taste buds were singing with JOY! 

Ma McCarthy totally has a knack for converting recipes to more healthy versions. The original recipe is from Quinoa 365 but this version is joyously-approved because of the healthy swaps my mom made. Now I'm not gonna lie to you and tell you the sugar content is ideal but you can make your own modifications as you see fit. You only have a birthday once a year and this is a worthwhile indulgence

Note to mom if you are reading this: You are more then welcome to make these again for my joyous birthday in December! xox

This sounds & looks awesome! You mentioned in a post yesterday that it could be make without using eggs. I have a friend who is gluten & dairy free & can't have eggs. What would I substitute for the eggs? Thanks!

Hi Joy, I have made this cake from the 365 book and it was amazing. But i was not atvall happy with the amount of refined sugar in it. Thanks so much to you and your mama for tweeking the recipe! I will make this new version for fathers day! :)

Hi Joy, this looks amazing!!! I am allergic to eggs however - do you think using flax or chia "eggs" would work as a substitute? Thank you!

So delicious. I tried it-thanks so much for sharing this with us. It is so much fun to try some of the recipes that health conscious foodies create. It is really turning old fashioned baking on its head. I am in my 60s and just went gluten and dairy free. It has made a dramatic difference to my arthritis. Who knew!

I made this cake last night and it was AMAZING!! You would never know it was made without flour! Served it with coconut whipped cream. Then ate it again for breakfast with my tea this morning! This will definitely be my go-to cake! Thanks so much!

My all time favorite chocolate cake! I do have to admit... I top the cake with a 70% chocolate ganache. Delicious!

Could I use tri-colour quinoa for this? I don't have any white on hand but need to make a cake for tomorrow! Or could steel cut oats work as a sub, or would they be too dense?

This is an incredible recipe! I made it with tri-colour quinoa as I had no white quinoa on-hand, I just cooked the quinoa a few minutes extra, and it turned out beautifully!
