Oven Roasted Parsley Potatoes

These delicious, crispy roasted potatoes, are the perfect side dish! This easy recipe is plant-based, grain-free, and vegetarian. These potatoes are crispy on the outside and fluffy on the inside.

Every summer we visit my father-in-law in Austria and every summer I eat my weight in parsley potatoes (well, just about!). Walker eats his weight in sausage and schniztel AND potatoes. He can't help it, he's got Austrian DNA. It's not surprising we ate so many parsley potatoes when one of the most popular side dishes in traditional Austrian restaurants is potatoes with parsley!

Traditionally this dish is made by boiling peeled potatoes, but I used red potatoes and I didn't peel them because there's where most of the minerals are stored. I baked them in the oven with homemade garlicky ghee and seasoned them with sea salt and pepper.

They are absolutely delicious, the right amount of crispiness on the outside and soft on the inside!

I always buy organic potatoes otherwise they are heavily sprayed with pesticides. Plus, they are typically an inexpensive vegetable and fairly easy to find organic at your local grocery store or health food store.

I just washed the potatoes and cut off the yucky bits. I always keep the peel on my potatoes because that's where most of the fibre and minerals are found.

The melted ghee mixture gives this recipe a signature taste. After I melted the ghee, I added minced garlic and just before serving, I mixed in the fresh parsley and seasoned the potatoes with sea salt and pepper. 

This is a classic dish for any occasion! Whether you're entertaining, making dinner for two, or a family of 4, this recipe is a winner.

Before I get to the recipe, I want to tell you about all the health benefits of parsley because it's an amazing superfood!

Health Benefits of parsley

  • Contains antioxidants such as luteolin, apigenin, lycopene, beta-carotene and alpha-carotene that are all responsible for the disease-fighting properties of parsley.
  • Strong anti-inflammatory properties to help reduce pain and swelling associated with joint pain or arthritis.
  • Aids the liver in detoxification
  • A natural diuretic which helps relieve water retention.
  • Supports digestion by reducing bloating and increasing bile production and beneficial gastric juices. 
  • Helps to reduce bacteria that causes bad breath (a perfect pairing with garlic!).

We enjoyed these parsley potatoes with Roast Chicken Thighs with Dijon Marmalade and roasted broccoli.

Ingredients
  • 5-6 medium red potatoes, washed and cubed
  • 1/4 cup ghee, melted
  • 1-2 garlic cloves, minced
  • 1/4 cup tightly packed, finely chopped flat leaf or curly parsley
  • Sea salt and pepper to taste
Instructions
  1. Preheat oven to 350F (180C).
  2. Melt ghee over medium heat. Add minced garlic and stir.
  3. Place potatoes in a baking dish. Drizzle garlicky ghee over top of potatoes and stir to make sure they are evenly coated.
  4. Bake in oven for 35-40 minutes until fork tender.
  5. Remove from oven and sprinkle fresh parsley over top of potatoes. Season with sea salt and pepper. Serve immediately.
