Berrylicious Unicorn Bites

These bites are perfect for kids to bring to school because they are nut-free! They are also dairy-free, egg-free and gluten-free. There's no sugar added and they are yummy!

Now that the cat's officially outta the bag on social media, you may already know that we've launched a kids line in partnership with Genuine Health – a trio of natural health supplements for kids!

It would be an understatement to tell you I'm excited about this!! When it launched yesterday, I felt like it was my birthday (and by the looks of the photo below, you'd think it was V's bday – that face!!) because I'm so proud to bring you supplements for kids that you can totally trust. The research is clear, kids are not meeting the recommendations to stay healthy and truly thrive.

let's take a closer look at the nutritional status of kids today:

  • Approximately 40% of their fruit and veggie intake is from juice and white potatoes.
  • Kids are not eating enough fibre due to the consumption of ultra-processed foods.
  • Up to 84% of children consume less than one serving fish/seafood per week.
  • Kids are not typically eating gut-loving fermented superfoods like kefir or sauerkraut.
  • Obesity, diabetes, ADHD, asthma and allergies in children are dramatically on the rise.

When I was developing recipes for the fermented organic gut superfoods for kids, and these purple balls were created, Vienna thought they looked like Unicorn poop! Since that may not sound the most appetizing, we've renamed them Berrylicious Unicorn Bites (just don't tell Vienna).

The flavour is grape, so I added medjool dates to help them stick, blackberries, shredded coconut and oats. They're tasty little bites! They're also packed with fibre, vitamins, minerals and antioxidants. And most importantly, they are gut-loving as they support the growth of gut microbes.

Ingredients
  • 1-1/2 cups unsulfured shredded coconut (reserve 1/2 cup for coating)
  • 1 cup rolled oats or quick oats
  • 2 scoops Genuine Health's fermented organic gut superfoods kids
  • 8-10 medjol dates, pitted
  • 1 cup blackberries, fresh
  • Optional: 1 tbsp coconut butter, (warmed)
Instructions
  1. Place 1 cup of shredded coconut and oats into food processor. Blend until combined and the oats are a finer texture, (but not into a flour texture).
  2. Add dates, fermented organic gut superfoods powder and blackberries to the food processor. Add coconut butter if using. Warm it up in a pot before adding to help it blend easier. Blend until smooth.
  3. Roll into 1 inch balls and coat some or all of them with shredded coconut. If they are not rolling easily, put them in the fridge because they may be easier to roll when chilled.
  4. Enjoy immediately or refrigerate for up to 5 days. Freeze for up to 3 months in an airtight container.

Notes

Makes 22, 1 inch balls.
*You could make these with frozen blackberries but it will change the texture and you may need to add more coconut flakes and oats.
If you have trouble getting them roll if they are too dry, add another date or 2.

What would be a substitute for the GH superfood? Could I sub almond flour and how much? They look so good.

Please, please, pretty please convince Genuine Health to sell their products (all of them would be GREAT or at least the ones you use for kids, of course 😍😁 ) also on Amazon.fr with Belgium as one of the destinations. It’s almost impossible to find get or even find their produce on sites that deliver in Belgium and if you do, the transportation costs are huge. I wanna try them and I’m sure they are great, cause you’re using them and I trust you. So pretty please, Joy dear, do some magic and help some souls from another continent get some good extra stuff into their diet! 😁 Thank you! Love you! Big hug! 🤗😘🌷

Oh Joy these were so easy to make but because of preferences in this house, I had to change a few things. Swapped out oatmeal for organic puffed brown rice and strawberries instead of blackberries. Tasted great...however, they looked like raw meatballs because they were so red!😜 Nothing s little drizzle of melted dark chocolate couldn’t fix. The chocolate helped convince my non healthy eaters to try them. Keep the kid friendly recipes coming!! Janet

In the Unicorn bites, what could I substitute oats with? My little man is sensitive to oat, dairy and gluten etc etc!! Would flax or something like it be a good alternative? Thank you!
