Plant Power Balls

These plant power balls are flavour-packed and I love the texture! Eat two to three of them and you'll feel like you've had a good snack because they've got "substance". They are packed with fibre, vitamins, minerals, protein and tons of phytonutrients like antioxidants and anti-inflammatory compounds because I've added Greens+!

Greens+ is a wonderful addition to these balls because it is clinically proven to boost energy and vitality. Not only that, it is supportive for the immune function.

Greens+ should not be given to children under the age of 16 so just keep that in mind if you're making these for your little one. However, you can swap in organic fermented gut superfoods in place of greens+ which is kid-friendly. Now if you don't have either, don't worry, you can still make them - the recipe still works but a scoop of greens+ or gut superfoods adds a really great boost of nourishing plant compounds. 

I love making energy balls like this recipe because there is little prep involved -- no turning on the oven and nothing to cook. All you need is a small kitchen appliance to really chew up all the ingredients (get out your food processor) and then roll into balls! 

They freeze really well for up to 3 months or refrigerate for up to 2 weeks.

These Plant Power Balls are...

I feel like I should tell you how they taste since they are green and that may be a little deceiving! They are naturally sweet because there are dates, coconut, lemon and dried cherries or blueberries (you pick!) to name a few ingredients. So although they don't taste like veggies, they are also packed with veggies from Greens+.

Ingredients
  • 1 cup raw cashews
  • 10 medjool dates, pitted and soaked for 30 minutes in hot water
  • 1 cup oat flakes or old-fashioned rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1 scoop Greens+ Multi, Berry Flavour*
  • Zest and juice from 1 lemon
  • 1/4 cup dried sour cherries, blueberries or raisins
Instructions
  1. Discard date soaking water. Combine all ingredients into a food processor and blitz until crumbly. Check the sticking power by rolling one into a ball. Feel free to add a splash of water or another medjool date if it's not sticking.
  2. Roll into balls. Freeze for up to 3 months or refrigerate for up to 2 weeks.

Notes

*If you don't have Greens+ or you're making this for a young child you can use Organic Gut Superfoods instead. If you don't have either, you can simply omit it because the recipe still works.

I used a tablespoon of maca powder instead of the greens which is what I had in my cupboard. They turned out GREAT! Thank you Joyous Health xo
