Chickpea Yum Yum Salad

I love the simplicity of this salad bowl because it's packed with veggies and yumminess! This salad is the perfect nutrient-dense salad that packs up perfectly for a lunch on the go and it's kid-friendly too!

I love the simplicity of this salad bowl because it's packed with veggies and yumminess! There are no leafy greens in this salad and I did that on purpose because I was making this for my daughter, Vienna, and I specifically chose all of her favourite veggies!

This recipe is...

I make this salad on weekends because it keeps really well for quick and easy healthy lunches during the week. 

Chickpea Yum Yum Salad

Ingredients
  • 1 can (398 mL) organic chickpeas
  • 1 cup cucumber, chopped
  • 1 cup grape or cherry tomatoes, halved
  • 1 sweet yellow pepper, chopped
  • 1/4 cup fresh herbs (mint, basil, or dill) chopped
  • 1/4 cup extra-virgin olive oil
  • Juice from 1 lemon
  • Pinch of sea or pink salt
Instructions
  1. Drain and rinse chickpeas. Set aside.
  2. In a salad bowl, combine chickpeas, cucumber, tomatoes, yellow pepper and herbs. Pour olive oil and lemon over top. Mix to combine and then sprinkle with a pinch of salt.
  3. Enjoy immediately, or refrigerate for up to 1 week.

important note!

Please make sure you always use organic chickpeas, whether you use dried or canned. Otherwise, they may likely be contaminated with glyphosate, the main ingredient in the common weed killer, Round-Up, which is considered a likely carcinogen (cancer-causing) by the World Health Organization. You likely heard in 2018 there was a report released on popular brands of hummus and their glyphosate levels were shocking! 

When I buy hummus, I always buy the organic version of Sunflower Kitchen' Hummus especially because my daughter is a hummus monster. Alternative, you can make your own hummus with organic chickpeas!
